The Nagai Seminar has released a collection of recipes featuring local specialties from Izu Oshima Island as part of a joint project between the Tokyo Metropolitan Government and the university. (Hachioji Campus

On Tuesday, March 31, 2026, the seminar of Lisa Nagai, Senior Assistant Professor the Department of Faculty of Economics at Teikyo University's Department of Economics, published a collection of recipes for Izu Oshima's specialty products on the project website as part of a "joint project between the Tokyo Metropolitan Government and universities" *1.
The joint project "Creating Local Industries Utilizing Idle Greenhouses - Passing on Oshima's Resources to the Next Generation," in which the Nagai Seminar is participating, has been selected as a "Joint Project between Tokyo Metropolitan Government and Universities" for fiscal year 2025. This joint project, led by the University of Electro-Communications, with participation from Tokyo University of Agriculture and Technology, Tokyo University of Foreign Studies, and the Nagai Seminar at our university, aims to stably produce high-value-added raw pepper by utilizing idle greenhouses and combining advanced cultivation techniques with digital technologies. In addition, it will promote the creation and branding of local industries by verifying farming models in shared farms and developing menus that utilize Izu Oshima's specialty products.
In the 2025 academic year, the Nagai Seminar worked on developing menus utilizing specialty products from Izu Oshima Island. They combined menus using Izu Oshima-grown ingredients such as Angelica keiskei, amber-colored soy sauce, and Oshima milk with TFT (Tabletop Food Technology) *2, a core activity of the seminar, and served a total of 972 meals at the Solatio Kitchen student cafeteria on Hachioji Campus. The recipe collection released here was created by a registered dietitian at Ginza Suehiro Cafeteria Service Co., Ltd., the operator of the student cafeteria, based on menus devised by the students. The six menus served at the student cafeteria can be easily recreated at home, so please enjoy the flavors of Izu Oshima.

For each meal purchased from the TFT menu, 20 yen is donated to help pay for school meals for children in developing countries.
