Nagai Seminar held the final TFT (TABLE FOR TWO) activity of the 2025 academic year as part of the "Tokyo Metropolitan Government and University Collaborative Project" atHachioji Campus

On Tuesday, December 16, 2025, the seminar of Lisa Nagai, Senior Assistant Professor the Department of Faculty of Economics Department of Economics, Teikyo University, served the final TFT* 2 menu of the year, "Cream pasta using asa-ba from Izu Oshima," at the student cafeteria Soratio Kitchen on Hachioji Campus as part of a "joint project between the Tokyo Metropolitan Government and the university" *1.
The joint project in which Nagai's seminar is participating, "Local Industry Creation Project Utilizing Idle Greenhouses - Passing on Oshima's Resources to the Next Generation," has been selected as a "Joint Project between Tokyo Metropolitan Government and Universities" for fiscal year 2025. The University of Electro-Communications is the representative of this joint project, with participation from Tokyo University of Agriculture and Technology, Tokyo University of Foreign Studies, and Nagai's seminar at our university. By utilizing idle greenhouses and combining advanced cultivation and digital technologies, the project aims to achieve stable production of fresh pepper, a high-value-added food ingredient. Furthermore, the project will promote the creation and branding of local industries by verifying farming models at shared farms and developing menus using Oshima's agricultural products.
Nagai's seminar developed menus utilizing agricultural products from Oshima. This time, they combined a cream pasta made with Izu Oshima's ashitaba (beautiful leaves) with TFT, a core activity of the seminar, and sold out 140 servings. Yuta Kuroki (3rd year, Faculty of Economics) commented, "As this was the final TFT menu, we wanted to use oosaya (sweet bean paste), a winter vegetable grown on Izu Oshima, but we were unable to secure enough and had to quickly switch to ashitaba. It was difficult to create a menu that felt Christmas-like and featured ashitaba as the main ingredient. However, we managed to create it and sold out, so we're glad." Nagai's seminar has sold a total of 972 TFT menus over six sessions as a joint project this year, bringing the total number of TFT menus sold since 2021 to 8,702.
Nagai's seminar will continue to work on promoting joint projects.
