Nagai Seminar Hachioji Campusconducted the first TFT activity of 2025 as part of a joint project between the Tokyo Metropolitan Government and the University.

On Tuesday, June 24, 2025, the seminar of Lisa Nagai, Senior Assistant Professor the Department of Faculty of Economics at Teikyo University's Department of Economics, served the first TFT *2 menu of 2025, "Tempura bowl with asa-ba from Izu Oshima," at Soratio Kitchen as part of a "joint project between the Tokyo Metropolitan Government and the University" *1.

The joint project "Local Industry Creation Project Utilizing Idle Greenhouses - Passing on Oshima's Resources to the Next Generation" in which Nagai's seminar is participating has been selected as a "Tokyo Metropolitan Government and University Joint Project" in 2025. The University of Electro-Communications is the representative of this joint project, and Tokyo University of Agriculture and Technology, Tokyo University of Foreign Studies, and Nagai's seminar are participating. By utilizing idle greenhouses and combining advanced cultivation and digital technologies, we aim to steadily produce fresh pepper, a high-value-added ingredient. In addition, we will promote the creation and branding of local industries by verifying a farming model at a shared farm and developing menus using agricultural products from Oshima.

Nagai's seminar worked on developing menus using agricultural products from Oshima, and this time they offered a tempura bowl using Oshima-grown ashitaba (angel leaf) in combination with TFT, a core activity of the seminar, selling out all 168 servings. On the day, Professor Akira Ishigaki of the University of Electro-Communications, as well as Masaaki Kusakabe, CEO of Pluswatch Inc., which is supporting the demonstration experiment on Oshima, also visited Soratio Kitchen and spoke with the seminar students. Seminar leader Yuta Kuroki (3rd year, Faculty of Economics) commented, "We had a hard time deciding which Oshima-grown ingredients to use, but we're relieved that we were able to sell out. In the future, I would like to visit Oshima in person to inspect the area and work to convey the island's charm through our menu."
Nagai's seminar will continue to work on promoting joint projects.

  • *1 Utilizing the knowledge resources of universities participating in regular meetings with universities, we will implement joint projects that contribute to the sustainable development of Tokyo and the promotion of SDGs, and return the results of our research to the citizens of Tokyo.
  • *2 Abbreviation for TABLE FOR TWO. An initiative promoted by the international NPO TABLE FOR TWO International, which aims to eliminate the food imbalance between lifestyle-related diseases caused by food, such as obesity, in developed countries and the problem of hunger and malnutrition in developing countries, and simultaneously improve the health of both groups. For each meal purchased from the TFT menu, 20 yen is donated to help pay for school meals for children in developing countries.
